Mini Vegan Shrimp Egg rolls

Ingredients

  • vegan wonton rolls
  • bag of asian salad mix
  • scallions/ green onions
  • soy sauce
  • ground ginger
  • rice vinegar
  • garlic powder
  • onion powder
  • 5 cloves of garlic (We love garlic so we used five for that amazing flavor)
  • fresh grated ginger( Highly recommend adding fresh ginger, it makes this dish go wow! It is something about fresh ginger to dishes that allow an abundance of flavor running through your soul)
  • glass of water
  • sesame oil
  • grapeseed oil

Tools needed

  • wok (a pan would work just as well, we recommend a cast iron skillet to get that crisp and extra iron for yourself as well that comes from using a cast iron.)
  • wooden spoon (any spoon would work fine but be sure you do not use metal on metal)
  • food processor (can also use a knife to chop the garlic and ginger)
  • knife
  • bowl

Marinate for vegan shrimp

  • nori furikake
  • garlic powder
  • onion powder
  • tsp of grapeseed oil
  • old bay seasoning
  • coconut aminos
  • cayenne pepper
  • nature harvest green seasoning
  • cornstarch or tapioca starch (optional but this will create a firmer texture on shrimp)

directions

  1. Begin with placing your marinated shrimp in the starch and placing them inside and air fryer or oven, coating in avocado oil.
  2. Use a food processor/or knife to dice the thumb of ginger and also 5 cloves of garlic.
  3. You will then add in about a TBSP of grapeseed oil to the wok and wait until it is very hot and then add in the garlic and ground ginger until it becomes fragrant, this will happen very quickly and be sure to keep and eye out you do not want to burn either of them.
  4. Add the bag of asian cabbage mix and add in the above ingredients
  5. Be sure to not add a lot of sesame and rice vinegar since a little goes a long way.
  6. You will cook this down until it begins to wilt, you can turn off the burner and place the wok on another burner then place inside a bowl to allow to cool down some until your able to handle it.
  7. Use your counter space/cutting board and place your wonton roll, be sure your wrap is pointed towards yourself to ensure the proper formation when rolling.
  8. Take about a TBSP or less and place it on the wonton roll closer to the arrow, and then place one shrimp or two on top depending on the size.
  9. You will begin by rolling the the arrow over to almost completely cover your filling, take some water and place it around the edges of the wonton roll and begin to fold each side in using the water to create closiers on each side. You will then continue to roll and close with water.
  10. This will essentially be creating a small rectangle.
  11. Continue until you have made enough and refrigerate the rest for either another meal or more later in the week,
  12. These will also freeze well and can be air fried.
  13. Enjoy and let us know what you guys think of this recipe!!

Vegan Baked Fish “PHIISH”

Ingredients

  • two cans of Hearts of Palm
  • Half of a lemon
  • pepper
  • garlic powder
  • dill
  • old bay
  • Grace fish seasoning (found at our local grocery store, they have many seasonings and products we use on a regular that are all amazing!)
  • green harvest seasoning (this brand can be found at Whole Foods)
  • grapeseed oil (used to help seasoning stick to create the marinate, also used to create a fat)
  • miso ginger marinade (found at Sprouts, can be substituted for ground ginger, ginger paste or any ginger item you have in your pantry that can be used in its place. This can also be omitted but for ourselves we love some ginger so we made sure to include it.)
  • paprika
  • lemon pepper seasoning
  • nori fakake (can be found at Asian markets, Trader Joe’s and also on Amazon)

Tools needed

  • small baking dish (can also use an airfryer, convection oven or anything that you can literally bake inside, this would also be awesome on the grill!)
  • wooden spoon or utensil if you do not want to use your hands.

Directions

  1. Begin by opening your two cans of hearts of palm, draining and rinsing off any excess liquid.
  2. Place the pieces on a cutting board and using a fork shred each side being careful not to break it completely. If it does that is okay its still eatable and will all come together in the baking dish once you’ve baked it. Do this until all of the pieces have been shredded on both sides.
  3. Set the shredded “phiish” to the side and begin to work on the marinade, using all the seasonings listed above beginning with the oil. Be careful with anything with salt content to ensure you do not make your dish salty. Start with a little then gradually add. If you do not have all the above seasonings use what you have it will still come out perfect. One ingredient we recommend for sure is the nori which adds the “sea” flavor to your dish.
  4. Place shredded “phiish” in the dish with the marinate and gently toss the pieces to make sure all sides are coated. (we allowed this to marinate overnight, do this for at least two hours for best results.)
  5. Baked at 375F for about 45 min.-1hr with sliced lemons.
  6. We served with red potatoes, broccoli and corn on cob, Creole style! Dinner was amazing and we are sure you will feel the same! Baked vegan “phiish” will become apart of your weekly family meals we are sure of it! ENJOY!!

Vegan Beef “BIIF” Stir fry

Ingredients

  • vegan “beef”
  • 1 large shallot
  • 3 stalks of carrots
  • 1 bag of fresh broccoli
  • 1/2 red pepper
  • 1 green pepper
  • grapeseed oil
  • tapioca starch
  • ginger

MARINATE

  • worchestire sauce
  • coconut amino
  • garlic powder
  • organic sea kelp seasoning
  • paprika
  • pepper
  • grapeseed oil
  • ginger powder

sauce

  • tamari
  • ground ginger
  • organic rice vinegar
  • chili oil
  • roasted garlic bouillon
  • extra spicy gochujang
  • paprika
  • garlic powder
  • onion powder
  • onion flakes
  • red pepper flakes
  • sesame oil
  • coconut sugar

TOOLS NEEDED

  • wok
  • cast iron skillet
  • wooden spoon
  1. Begin with marinate ingredients listed above, added gradually to coat your vegan beef substitute, you can also use mushrooms, seitan or soy chunks; allowing to marinate for at least 30 minutes, overnight is best.
  2. Use either tapioca or cornstarch to coat “beef”, this is to create a texture and to also thicken sauce when combined.
  3. Prep sauce for the stir fry and set aside
  4. Slice vegetables julienne, you can also use a potato peeler for the carrots which is what we did.
  5. Use a pot preferably a cast iron skillet and shallow fry your “beef” in until crispy, depending on your preference, we like texture so kept it on about 5 minutes or so on each side until golden brown.
  6. Set aside on a paper bag or paper towel to drain excess oil.
  7. Add about a tablespoon of grapeseed oil to wok allowing oil to heat until it begins to smoke.
  8. Add in ginger and garlic followed by sliced vegetables, then broccoli.
  9. Allow them to cook until bright in color and add in vegan “beef”
  10. Lastly add in your sauce to coat and turn heat off. The steam from the the cooked vegetables will warm your “meat” and sauce.
  11. Plate with rice or over noodles as desired, we served ours with jasmine rice.
